Healthy Baked Broccoli Bites

It’s important to make sure your child has a healthy balanced diet as it has a positive impact on your child’s physical and mental health and wellbeing. This recipe is for some Healthy Baked Broccoli Bites that taste great and your child can get involved with.

Ingredients:

  • 340g uncooked or frozen broccoli
  • 1 large egg
  •  35g onion
  • 45g cheddar cheese
  • 85g breadcrumbs
  • 2 tablespoons parsley
  • Pinch of black pepper

1. Preheat the oven to 200oC. Grease a baking sheet or line with parchment paper.
2. Put the broccoli in boiling water for 1 minute then remove and plunge in a bowl of ice cold water then drain well.
3. Chop the broccoli finely and mix with the egg, onions, cheddar, breadcrumbs and seasoning. Scoop 2 tablespoons of mix and gently press between your hands to shape. Wash your hands between every few bites to avoid sticking. Next place the bites onto a baking sheet.
4. Bake for 18-20 minutes turning halfway, until golden brown and crispy and enjoy with your favourite dipping sauce.
